NATIONAL FALL FOLIAGE WEEK
I did a post on National Fall Foliage Week last year and although I am late this year reminding you about it, I hope you will enjoy this new post, learning about The Yankee Chef, and entering the giveaway.
The week is observed every year beginning on the last Sunday of September in the United States. The official week of observation is over but you still have time to enjoy the fall foliage.
The creator of this yearly event, Jim Bailey, says the sole premise behind this observation is to get families together and enjoy nature at its most beautiful.
He adds, “So take at least one day out of this week to take a walk on that path you trod as a child or under the vivid hues of the leafy umbrella that once beckoned our ancestors time of harvest. But don’t forget to put that roast in the oven, along with a pie or two in order to keep that amazing, comforting feeling with you as long as possible.”
ABOUT JIM
Jim’s family has been here in the United States since 1635, arriving in Maine and finally settling in Massachusetts. His great grandfather, J. Frank Bailey, was a musician and a cook in Maine. Born in 1870, he struggled and worked hard his entire life. He passed down his love of music and food to his son Samuel Bailey (Jim’s grandfather).
Sam was born in 1902 and studied violin in Boston and Maine, only to choose the chef route the majority of the time. He taught violin but his second love was Yankee cooking. Owning a number of restaurants and Sam’s Clam Shack, he was the consummate Yankee Chef.
Sam’s son Jack Bailey (Jim’s father) was born in 1938. When he passed away her left behind volumes of books on the Yankee life, stories, and recipes. Everyone who knew Chef Jack said he could make 10 dishes from 1 pot of water.
THE YANKEE CHEF
Have you heard of The Yankee Chef ®? Jim, is that particular chef! He has been cooking since the age of 14 when his father Jack opened his third restaurant in Maine. Just like his father, Jim also learned the violin as well as cooking.
Jim is a third generation Yankee Chef and the premier New England Food Historian. He is married, has 4 children, and resides in Maine. Over the years, he has amassed a huge library of everything Yankee. It has gotten to the point that a relaxing night reading a book means grabbing a non-fiction book about New England as well as reading folklore and ghost stories of New England.
His passion lies in the ability to demonstrate how everyone can enjoy those masterful recipes seen being made on television without the special equipment, deep pockets, and 20 word titles. Most of his recipes deal with items that you already have or are easily accessible at any supermarket and without breaking the bank. Adding some Yankee ingenuity and flair while keeping the price at an affordable level will have you creating some beautiful and artful dishes that, indeed, rival any Michelin-star meal.
COOKBOOKS
Jim’s cookbook, Refreshed: Lighter, Simpler Comfort Food emphasizes a wide assortment of fruits, vegetables, and low-fat ingredients with a collection of more than 180 recipes that will refresh you in a way that will have you up and walking after eating rather than slumping down on the couch. He continues his tradition of combining common ingredients, cost conservation, and simplicity into savory fare anyone can prepare. Generously seasoned with a nutritionist’s advice, some surprising food facts and figures, and inspirational quotes, and will keep you inspired to eat better and feel better.
His new cookbook, The Sweet Fight: Helping your child, and yourself, to enjoy fruits and vegetables rather than junk food has over 140 unique, kitchen-tested and ingenious recipes that will change your thinking about what we eat and why we eat it. It is dedicated to children’s health and how we can change the course of our eating habits. Jim comes through again to create the most intensely flavored recipes that sets the foundation to inspire, invigorate, and help everyone change how they think about junk food. Go from the empty calories of chocolate to the brilliance of colors and flavors of fruits and vegetables to quench that sweet tooth. After all, as the cover suggests, it is an ongoing fight to win over our children, but we must change our eating habits for them and for all those who come after us. Love one another enough to make that change and use empty calories and savory fat-laden proteins as a flavor rather than the main course.
TOPPINGS AND SYRUPS
Jim’s It’s Just That Simple!™ toppings and syrups for ice cream/desserts and pancakes/waffles has NO ADDED SUGAR OR CORN SYRUP!!! That’s right! Take a look at every topping and syrup anywhere and the first two ingredients you will find is sugar and/or high fructose corn syrup. But not with this brand! A touch of natural stevia is added to a couple of the products that helps to entice customers as well as maintaining that “sweet tooth” habit that fake toppings and syrups have permeated our taste buds. The It’s Just That Simple!™ brand was started because of the explosive instances of diabetes among children and adults and Jim wanted to do something about it. So he did and at a cost that every single family can afford! Jim says, “Every single customer at our popular $2 Sundae stands throughout central Maine has expressed disbelief that we add no sugar or corn syrup!”
JIM’S PINK CHEF COAT
Jim is also the chef who wears a pink coat simply because he carries his father’s legacy with him through his cookbook, cooking, and everyday that he writes his food columns. He carries his mother with him through a silent reminder of her struggle with breast cancer that took her life, as well as the lives of many other women who have dealt with, and are still dealing with this horrible affliction. He adds, “Besides, why not pink? It makes a man look good!”
Now you know more about National Fall Foliage Week and the man who thought it worthy of observing every year.
